Cauliflower Salad

Ingredients

1 head cauliflower, thinly sliced
1 cup red bell pepper, thinly sliced
1/4 cup green onions, sliced
1/2 cup fresh parsley, chopped
1/4 cup pistachios
2 tablespoons orange juice
1/8 cup extra virgin olive oil
1 tablespoon vinegar
2 tablespoons dried cherries
3/4 teaspoon salt
1 tablespoon  black pepper 

Directions

Mix all ingredients together and set aside in refrigerator or at room temperature if serving soon.
